Our Executive Chef Valerio Pachetti knew from an early age that he wanted to be a chef. Born in Colombia to an Italian father and a German mother, he credits his parents to have instilled in him an appreciation of good food and different cultures. Chef Val began his culinary education in Rome and since then has worked around the globe, from 2 star Michelin restaurants to 5 Star luxury resort restaurants in Italy, Brazil, Colombia, Myanmar, Viet Nam, Indonesia, India, UAE and Thailand. Chef Val is enthusiastic to bring his expertise to St Lucia and we are thrilled to have him lead our teams at Jade Mountain and Anse Chastanet.

Chef Val is comfortable to speak and cook in 6 languages: Italian, Spanish, English, French, Portuguese, Vietnamese/Bahasa. His interest in languages does not end there as he is also able to communicate in basic Thai and is currently studying Mandarin. He has a passion for yoga and Asian philosophy with a deep respect for nature which is also reflected in his culinary philosophy. He calls his recipe for success his focus on teamwork, attention to detail, passion for the creative process and instilling in his teams a great sense of taste, importance of consistency and good quality produce. Chef Val loves the farm to fork concept at Anse Chastanet and Jade Mountain, believes strongly in sustainability and also pays attention to ayurvedic dietary balancing systems. He looks forward to living and working in Saint Lucia and meeting our guests.
