We begin the new year with hope and enthusiasm. For us at Jade Mountain and Anse Chastanet sustainability is not a lofty idea but a fundamental and necessary endeavor. Our concept is centered on the food and drink for our guests to re-energize themselves. We believe it is about sharing our delicious modern Creole cooking through a unique, one-of-a-kind chef dinner in our Treehouse restaurant with Chef Valerio and Chef Frank, romantic beachfront dining experiences, and customized wellness cooking classes.
Our resorts were created with a mandatory philosophy of environmental consciousness at its heart. Join us for the Joy of Caribbean Vegan cooking as we celebrate the local bounty of St Lucia. We are embracing seasonality, and traditional practices, by custom growing our own organic fruits, tropical fruits, citrus, root vegetables, unique vegetables, salad greens, microgreens, braising greens, herbs, micro herbs, chilies, spices, cacao, vanilla, chocolate, honey, and much more.

St Lucian Independence Food Festivities
Saint Lucia celebrates its 43rd Independence Anniversary this year. Join our Annou We-y culinary milestone with a parade for your senses throughout the entire month. In addition, Chef Elijah will share his passion for local & seasonal ceviche in his Friday - Cook Like a Lucian Sessions in the Jade Club.
Each Sunday it is National Colours Day, festivities include our Caribbean Rum Mixology workshop on the beach at Anse Chastenet. Everyone is encouraged to dress down in casual and flowing wear reflective of our national colors.
Come celebrate the Independence holiday on February 22nd with our Executive Chef Valerio along with Chef Frank as they host a Gourmet St Lucian wine pairing dinner this evening at sunset.

Chef Allen Susser & Executive Chef Valerio are devoted to using only the freshest seasonal ingredients that reaches well beyond the recipe but into a dedication to creating food that tastes amazing, local, and delicious.
Cooking in Paradise is a signature event exclusively for guests of Jade Mountain and Anse Chastanet. You may find paradise looking toward the rare World Heritage Site of the Piton Mountains rising straight out of the Caribbean Sea. Poets, painters, and philosophers such as Milton, Hemmingway, and Pound heralded paradise, now you can experience it for yourself in a series of farm-to-table Wednesday lunches, tasting menus by Chef Elijah in Jade Club, an all out of the box beach burger bash. Join Executive Chef Sherma for a bean-to-bar chocolate tour and hands-on truffle class. Sundays on the beach is Rum Mixology and our famous Coco-Doo.
Sustainable Tropical Tribute to Earth

Join us for our Farm to Fork Ital experience. Throughout the month we will have a special lunch and learn Live on our farm. Experience the spring harvest, led by our Executive Chef Valerio and farm manager Damian. Learn to cook your just-picked organic bounty with your own hands and our chefs. Our cooking is sustainable and pays homage to living close to the earth.
Happily, seasonal cooking is sustainable. By centering on locally grown food Chef Elijah will enthusiastically create a seasonal tasting menu designed for your personal taste for you to enjoy in your own sanctuary.
Jazz! Food & Arts Festival
The Caribbean is a giant melting pot of flavors and cultures. This diversity leads to creativity. Our food, Art & Music is bold, flavorful, spicy, hot, and fresh.
Nightly, local jazz artists perform in our Jade Club for guests who are enjoying Chef Elijah’s creative dinners. The sound of the local beat can be found most evenings in the Petite Piton Lounge where we are introducing our modern Caribbean Rum cocktails.
Yasha's Emerald Estate craft-brewed beers are the highlight of the party on Tuesday nights at our Jump up party a live steel band. We are presenting the abundance of Creole cooking with live cooking stations, an interactive Carving station, and flambeed dessert.
Our Executive Chef Valerio is hosting a series of culinary arts cooking classes – Palet to Pallet inspired by local artist who will be on hand to introduce their creative paintings, drawings and hand carvings and culinary collaboration. It is a feast for the senses.
Caribbean Fisherman’s Festival
Fish is the backbone of Caribbean life. So much nutrition comes from the sea that surrounds the Island. Mother nature is in charge of doling out a dry season and a wet season. Each offers unique tropical fruits, citrus, and vegetables. One of the great things about the Caribbean is that its cooking is colorful, juicy, crunchy, bitter, herby, and spicy – making it exciting to eat. Be sure to join us for our West Indian seafood tandoori class led by Apsara’s Chef Rubin.
Chef Valerio & Chef Frank host a Tropical Gourmet Monday Wine dinner at Balawoo with Sustainable Local seafood. The menu focuses on pairing our local catch with seasonal fresh carambola, papaya, star apples, mango, and soursop.
Friday nights we host a Green Fig & Lionfish beach dinner. With your feet in the sand and a tropical Pineapple Coconut Lime Spritzer in your hand, you will experience our sustainable lionfish tasting menu.
The Fisherman’s feast takes place on the last Sunday in June. This national holiday Fete Peche is a thanksgiving celebration featuring the vibrancy and treasures of the sea. Jade Mountain’s Chef Elijah has created a “ Bubbles and Fins” seafood tasting menu for each evening to be paired with effervescent bubbles from around the world including Venetian Presseco, Catalan Cava, and French Champagne - served each Sunday night in June.
15th Annual Mango Madness Festival
Mangos play an important role in the Caribbean because the flavor immediately takes you to visions of sand, sea, and lush tropical forests. Join our James Beard award-winning Chef Allen Susser, Our Consulting chef this month for our Mad, Mad mango festival signature 25# Mango Mojitos and reserve for our extravagant Night of 1000 Mangos dinner.
There is nothing quite like that first bite of a juicy mango, the sweet rush of flavor that drips down your chin and sometimes, even your elbows. Ranging in size, flavor, and colors like deep purple and neon yellow, the versatile tropical fruit is a well-loved symbol of summer. St Lucian mangoes undergo a ripening process that produces fleshy peach flavors, buttery tartness, and sour, fibrous bites that we do use in several treats and dishes like smoothies, cocktails, salsa, chutney, ice cream, and more. You can get away from it all too - enjoy the soothing richness of a mango message under the shade of a gigantic 100-year-old Mango tree and chill with our Mango Bajita Massage.
In the Caribbean, there are over 100 different varieties of mangos alone. Seeing these brightly colored fruit spilling over beach fronts, roadsides, and hilltops we encourage you to join us for our Mango culinary treasure hunt at Nick Troubetzkoy’s Organic Emerald Estate. Other excitement during this summertime festivities include Bikinis & Mangos Tasting bash, the West Indian Mango chutney workshop on the beach. Nick Troubetzkoy established Emerald Estate, because he understood what it meant to have local and organic Caribbean ingredients for his guests to enjoy. Now Yasha Troubetzkoy has taken us in a new direction in brewing naturally fermented and delicious beer on the Estate. Join us for a private Brewery tour at Emerald Estate to include tasting from our Brew master’s special vats. Picnic lunches will be served overlooking the farm landscape.
Grab yourself a rum punch cocktail and be transported to the sun-kissed beaches of the Caribbean. Our Roots & Rum Gourmet Mondays this month features a four-course dinner that has been carefully curated to pair each course with a Caribbean rum that perfectly complements the Cuisine. The evening will give guests a taste of paradise.
Rum Tasting at Anse Mamin is for guests to learn more about the history of St. Lucian and other Caribbean rums as well as to enjoy the great variety of unique taste experiences they present. We offer a special Rum Tasting that introduces participants to many of the finest rums the Caribbean has to offer. What better place to experience the joys of these finely crafted products than Anse Chastanet’s 400-acre Anse Mamin estate, the site of one of St. Lucia’s earliest sugar plantations. The historical ruins within this lush coastal jungle provide a perfect setting for the event.

We look to spices to capture the flavors of the Caribbean. Specific combinations of herbs, spices, and flavorings characterize St Lucian cuisine. These mixtures are influenced by the food stuffs native to the island, being distinctive to the climate and architecture of the land and sea. By reaching into our spice box, the foods, cooking, and specific dishes become immensely diverse.
The characteristic cooking is mingled with an intriguing aroma and taste that will surely evoke your culinary imagination. There was a time in history that spices where so precious that they were locked away. Let us let loose the wonders of spice together. Creole Heritage & Chocolate Month
Chocolate has been grown in the Caribbean for hundreds of years. Join us as we discover the dual history of St Lucia and of chocolate that is woven into its heritage. We celebrate our own handmade Emerald Estate Organic Chocolate this month. You will discover how we harvest exceptional flavor, that three generations of care and local technique have taught us how to grow remarkable quality cacao beans. We are a Bean to Bar single estate boutique chocolate maker.
You will indulge in chocolate croissants for breakfast and our famous Emerald Estate chocolate French toast. In fact, we will tempt you with our Bittersweet Chocolate Ganache treat at the Beach. Be sure to taste our Double Chocolate Chunk Ice cream. Chocolate Martinis are a favorite in Jade Mountain Club before dinner. We are featuring a 5-course exotic savory and sweet all-chocolate dinner menu. Join us to learn the art of chocolate truffle making from Executive Pastry Chef Sherma. Chocolate is known as the food of the gods.
During our Creole Heritage & Chocolate Month, we are hosting a special sensory chocolate tasting that we match with wonderfully fruity wines. We also invite you to a personalized Bean to Bar tour of Emerald Estate which is followed by a chocolate-making class in our Jade chocolate Lab, where you will help discover the crafting of small batches of cacao beans, slowly roasted and stone ground. Emerald Estate Chocolate is to savor, but then let the exotic essence carry you to the Creole Caribbean.
Jounen Kweyol, the last Sunday in October, is a national festival that celebrates Saint Lucia’s Kweyol (Creole) heritage with a mix of delicious Creole food, music, games and traditions. Join our chefs for our festivities at Anse Mamin beach.
Caribe Food & Wine Festival
Dive into the culinary world of Caribbean lobster. In true Caribbean style and flavor.
Our Lobster and Champagne festival is an amazing blending of tropical tastes and multicultural influences. It is a celebration of aromatic, sweet and tart, piquant and mild flavors. To understand and appreciate it, you must first understand some of their most important foodstuffs. St Lucian cuisine uniquely evolved with the borrowing and blending of foods and cooking styles. If you are new to Caribbean cooking, keep in mind that the food is always evolving due to the many cultural influences on the islands: French, English, Africans, East Indians, Spanish, Portuguese, Dutch, and other local populations all converged in the Caribbean, therefore, influencing the cuisines.
This is our culinary festival that is dedicated to fishermen and farmers. After all, it is the local fisherman who brings us the lobster and it is farmers that grow the grapes for the champagne. Begin the festivities with a champagne tasting, enjoy Chef Elijah’s all lobster tasting menu in Jade Club. At Anse Mamin indulge in just-caught grilled Caribbean lobster with Passion Fruit Butter and Icy fresh Presseco cocktails. Join our West Indian Tandoori lobster class learning to roast with exotic and aromatic Indian Spices. For an incredibly special experience, you can dive for lobster and we will cook your lobster catch.
Taste over trend – our Caribbean flavors dance to a tropical beat. You can experience the seasons’ natural rhythms blending into each other. It is almost impossible to talk about inspired cooking without talking about Festive Season as we celebrate National Day in St Lucia which means it is our Festival of Lights.
With the Feast of Saint Luce, Patron Saint of Light. The festival celebrates the triumph of light over darkness, good overcoming evil and the renewal of life. This made her feast day a popular day as it falls on the Winter Solstice - the longest night of the year. It is on our Celestial terrace where you will observe the universe and hundreds of shooting stars while sipping your after-dinner cocktail.
Chef de Cuisine Elijah Jules adds his “Jade Twist” to the Christmas dinner. He will be preparing a six-course Christmas tasting menu, including his award-winning Seafood
Chowder with Tarragon and Cognac, a truly memorable evening. Also featured are Christmas Farm Salad with Fresh Fruit and Shaved Vegetables followed by Pistachio
Crusted Lamb Rack. To finish, indulge with a local favorite - “Black Rum Cake” with Macerated Fruits and Ice Cream.
For Boxing Day we are offering a Lionfish Dinner – Eat them to Beat them
Help us keep an invasive species at bay whilst indulging in a 5-course culinary lionfish delight at the water’s edge at Anse Mamin beach. Experience a unique setup under the stars with a bonfire and a sumptuous degustation menu with optional wine pairing.
New Year's Eve is a full night of Jade Mountain Cuisine – the flavors are sweet and spicy balanced in harmony: Experience a sophisticated adventure in comfort with a 6-course tasting menu of all the best that Jade Club has to offer including a welcome Champagne Cocktail.
